Low-and-slow chicken stock

For this basic recipe, the most important thing is to find the right container. Stock can be made in a saucepan on the stove but this massively limits quantity and quality, as few households possess pans big enough. Instead we’re going to oven-cook in a large, deep roasting tray or casserole with a lid for a period of at least 8 hours – but, most conveniently, overnight.

The other difference between this stock and any other recipe out there is the lack of vegetables and herbs and all that stuff. I like purity of product. Vegetable stock profiles can be added at a later stage or made separately. I don’t think they’re necessary. Chicken stock should be chicken stock. Vegetables bring little to the party.

A great tip is to reduce your stock right down and freeze it in ice-cube trays for later use. These can then easily be brought back to a bigger batch by simply thawing and adding water.
